I saw that Melanie had made this the other night and I asked her for the recipe. So for dinner the other night I made a big pot of Sweet Potato and Kale Soup. It was quite yummy and I plan to eat it again for lunch today. I served it with Jasmine rice. It was really good.

Ingredients:

Vegetable stock (I used Chicken, because I didn’t have any vegetable)

Chopped sweet potatoes

Chopped kale

Corn kernels (I used frozen sweet corn)

Chopped celery (didn’t use)

Diced tomatoes

Carrots

Red onion

Garlic ( I was sick of chopping so I just used Garlic Powder)

Jasmine rice

Thyme

Turmeric (didn’t have any)

Salt

White Pepper

Cayenne (didn’t have any so used Red Pepper)

I threw it all in a big pot on the stove and cooked for over an hour. (Melanie used the crock pot. If I wasn’t craving it at night I would have done the same.)

So obviously I used what I had and made it similar. I never follow recipes, but people seem to still like my concoctions so try it for yourself. Make it your own variation. Let me know if you do.
